What to do on a cold, rainy morning? Make biscotti, of course.
These are, without a doubt, the best baked-anything I’ve made in a long time. Perfect texture, perfect flavor, perfect breakfast. All credit goes to Susan V of fatfreevegan.com. The only change I made to her recipe was making them cinnamon instead of gingerbread. Ginger isn’t my kind of thing- especially when springtime’s coming around. Also, I used spelt flour (generally, I only use spelt flour unless noted otherwise). The whole house smelled wonderfully of cinnamon, and they complimented my Chai Black Yogi tea perfectly. Not to mention how easy they were to make.
Easier than pancakes- when you’re attempting to make them gluten-free, vegan, and fluffy, at least. Overall, I HIGHLY recommend this recipe, and might possibly start making them on a regular basis.
